There really isn't anything better than a warming home cooked pudding. And don't forget, you can make a variety of these wonderful deserts with your bread maker !
Have your cake AND eat it: You benefit from tastier, healthier home made puddings, and keep the convenience of supermarket brands (the machine does the hard work for you). If you love sweet things then here are 3 great bread maker recipes to try out.
Delicious Lemon Pudding

Ingredients:
60g Butter Softened
175g Caster Sugar
2 Eggs, Separated
40g self raising flour
2 lemons, grated rind and juice
310ml milk
Method:
1. Beat the butter, sugar and egg yolks until creamy. Add flour, lemon rind and juice and stir. Slowly add the milk.
2. Beat egg whites until stiff and fold into lemon mixture.
3. Pour into bread pan.
4. Set your bread maker to bake. If the pudding needs longer repeat the bake cycle and stop using the stop button after a bit more time.
5. Serve pudding warm or cold with cream or ice cream.
Scrumptious Apple Crumble

Ingredients:
700g Apples peeled, cored and cut into small wedges.
60ml lemon juice
1/4 cup sugar
1/2 cup wholemeal plain flour
1/4 cup rolled oats
2 tablespoons brown sugar.
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
30g butter softened
Method:
1. Combine apples lemon juice and sugar and place into bread pan.
2. Combine flour and remaining dry ingredients and rub in butter.
3. Sprinkle crumble over apple mixture in bread pan.
4. Set the bread maker to bake.
5. Serve warm with custard or ice cream.
Glazed Doughnuts

Ingredients:
225ml warm milk
5 tablespoons water
1 egg, beaten
3 tablespoons butter, melted
150g caster sugar
600g bread flour
1 teaspoon salt
1½ teaspoons ground nutmeg
1 tablespoon yeast
250g jam
2 litres oil for frying
Method:
1. Add the milk, water, egg, butter, sugar, bread flour, salt, nutmeg and yeast into the bread maker pan.
2. Set machine to the sweet dough cycle.
3. When completed, take dough out and let it rest for ten minutes.
4. Roll dough out to 1/2 cm thickness. Use a 6cm cutter to stamp out rounds.
5. Place 1/2 teaspoon of jam in centre of half of the rounds. The other half will be the tops. Moisten the edges to fix them in place and pinch edges.
6. Place sealed doughnuts on an greased baking tray. Cover and let rise in a warm place until doubled.
7. Heat oil in deep fat fryer or large pan to 180 degrees C. Fry a few doughnuts at a time until golden brown for about 2 to 3 minutes.
8. Remove from oil. Drain on kitchen roll and sprinkle with icing sugar if desired.
